Detox Bubble Tea with Kiwi Pearls
Bubble tea is one of our favourite treats to sip on; it’s cold, rich, refreshing, and we can’t get enough of it! There are so many different types of bubble tea out there. The possibilities are endless when it comes to the boba and flavour combinations. Classic bubble tea is made with a black tea base, brown sugar syrup, tapioca pearls and a touch of milk. Then there are caffeine-free versions made with a fruit juice base and fruity bits. Both are equally delicious, and we thought why not combine the two for our Detox Bubble Tea with Kiwi Pearls! This recipe is caffeine-free, low in sugar and full of amazing health benefits. Check out the full recipe below.

Detox Bubble Tea with Kiwi Pearls
Kiwi Pearls Recipe
Ingredients:
- 1 cup fresh kiwi
- 2 ½ cup tapioca flour + extra for kneading
- ½ cup warm water
- 1 Tbsp Honey
Optional
1 Tbsp sugar or sweetener of your choice if you would like the pearls a little sweeter.Instructions:
- Peel the kiwi then mash or puree until smooth.
- Put the kiwi in a medium saucepan and add in the warm water, 1 tbsp of the tapioca flour and the optional 1 tbsp sugar.
- Heat on medium heat, stirring constantly for about 5 minutes.
- Remove from heat and let cool for only a few minutes, before adding in the remaining tapioca flour. Add in the flour a bit at a time mixing in between.
- Transfer the dough to a surface floured with extra tapioca flour and knead until the dough forms a shiny, non-sticky ball. You may need to add more flour until it becomes non sticky. If it starts to get dried out add a little more water.
- Put a damp cloth over your dough and pull off sections of dough at a time. Roll them into a rope shape about 1cm in thickness (about the size of your pinky finger nail). Then cut the rope into 1cm sized bited.
- Roll each piece of dough into a ball and coat them in more flour so they don’t stick.
- To cook the pearls, bring a large pot of water to a boil on the stove, then add in your pearls, bring it back up to a boil then reduce heat and simmer for 15-20 min with the lid on.
- Drain the pearls in a strainer and rinse with cold water or put in an ice bath.
- Lightly coat the pearls in honey and let sit for about 30 min before assembling your bubble tea.
