Calming Vegan Muffins

These Calming Raspberry Vegan Muffins bring us a whole lot of joy, and there’s something about baking that’s so relaxing. It gives us something to focus on mentally and physically, and helps us let go of what we cannot control. That fresh baked aroma fills the kitchen and reminds us of happy times. This recipe will do just that and a whole lot more because we’ve substituted the liquid for Thrive Remedies Calm Organic Adaptogenic Tea. Calm is a blend of rooibos tea, hibiscus, rosehips, passionflower and chamomile. These herbs are known for their ability to promote a sense of rest and relaxation and are the perfect addition for some much needed self care. Calming Vegan Muffins Recipe
Ingredients:
- 2 cup flour of your choice
- Pinch of Himalayan salt
- 1 tbsp baking powder
- ⅓ cup of avocado oil or vegan butter
- 2 tbsp chia seeds
- 1 cup Thrive Remedies Calm + ⅓ cup for the chia egg
- 1 tbsp vanilla
- 1 cup frozen raspberries
Optional:
2 tbsp maple syrup, agave or cane sugar to add some extra sweetness. You can also crush the frozen raspberries before adding them for a slightly different texture. Make sure to do it while there still frozen though so they don’t go mushy.Instructions:
- To make a chia egg, mix 2 tbsp chia seeds with ⅓ cup of Thrive Remedies Calm in a glass and let rest for 5 minutes.
- After the 5 minutes add vanilla, oil and one cup of Thrive Remedies Calm tea, to the chia egg and stir.
- Next add flour, baking powder, salt and sugar to the liquid ingredients and gently stir until fully combined.
- Add frozen raspberries and stir a couple more times.
- Grease a 12 cup muffin pan with cooking spray or oil and divide the muffins into all 12 spots evenly.
- Cook at 400 for 25 – 30 min, until golden brown.
